Tempering

Common in South Asian cuisine, tempering (“tadka” in Hindi) is a cooking technique where whole spices are briefly sizzled in hot oil or clarified butter (ghee) to release their essential oils, intensifying their flavor and aroma. The infused oil is then added to a dish to give it more depth.
