Flavor Compounds

Flavor compounds are the natural chemical compounds found in spices and herbs that we perceive as flavor. They’re responsible for the aromas, tastes, and sensations that define each spice or herb’s unique character. Most of them exist to protect the plant from microbes and insects, but those same defense properties benefit us too, which is likely why we evolved to find these chemicals so appealing.
