Tempering

While this term has various culinary meanings, in the realm of spice, tempering or blooming is when whole spices are briefly sizzled in hot oil or butter to release their flavor compounds that don’t dissolve well in water. The infused oil is then added to the dish. This technique is central to South Asian cooking (“tadka” in Hindi), but is also commonly practiced in other cuisines like Middle Eastern and Mexican.
