Pickling

Pickling is the process of preserving and flavoring foods by immersing them in an acidic solution (most often vinegar) or a salty brine. Spices and herbs are added whole or crushed to infuse their aromatic compounds into both the liquid and the food being pickled. This technique not only extends shelf life but also transforms the flavor profile—intensifying sour, salty, and spiced notes.
