Scotch Bonnet Pepper

The Scotch bonnet pepper is a cultivar of the chile pepper species Capsicum chinense in the nightshade family (Solanaceae). At 100,000 to 350,000 Scoville units, it shares both the species and the searing heat of the habanero, its better-known cousin. It’s more notably sweet and fruity, which made it a beloved cornerstore of Caribbean cooking, especially Jamaica, where it’s essential to jerk, pepper sauces, and curried goat.
