Lavender

Lavender is the spice produced from the flower buds of various species in the genus Lavandula, part of the mint family (Lamiaceae). There are approximately 50 species, but the two most widely used in cooking, each with hundreds of cultivars, are English lavender (L. angustifolia) and Lavandin (L. × intermedia).
