Asafoetida
Asafoetida, or asafetida, is the spice derived from the dried resin that exudes from the rhizome or tap root of several species of the genus Ferula, perennial herbs in the parsley family (Apiaceae). It is typically used in a powdered form and is mixed with wheat flour or rice flour to both prevent clumping and dilute the potency of the resin.
