Kkaennip
Kkaennip is the Korean variety of perilla called Perilla frutescens var. frutescens of the mint family (Lamiaceae). Koreans call the leaf kkaennip and the plant and its seeds deulkkae. The leaves are broad, flat, and barely serrated, and the flavor is far bolder than shiso, with a peppery, earthy punch. They are a classic wrap for Korean barbecue and serve as a base for pickles, kimchi, and seasoned side dishes. In Korea, the seeds matter just as much and are toasted and ground into powder or pressed into oil.
