Finger Lime

Finger lime is an Australian native citrus fruit [Citrus australasica (syn. Microcitrus australasica)] in the citrus family (Rutaceae). A thorny rainforest shrub of the Queensland and New South Wales border country, its slender, finger-shaped fruit ranges from green to pink to near-black outside, but the wonder is within: the pulp is a mass of tiny, round juice vesicles that separate cleanly and burst on the tongue like caviar. Finger lime’s awesome appearance, mouthfeel, and extremely bright, effervescent flavor made it a favorite of modern Australian and global fine-dining kitchens. “Citrus caviar” is scattered over oysters, seafood, and ceviche, folded into desserts, or simply dropped into cocktails.
