Emulsify

To emulsify means to mix two liquids that normally don’t blend, such as oil and water, into a stable, uniform mixture. This is done with the help of an emulsifier (like egg yolk, mustard, or fenugreek seed), which coats and suspends tiny droplets of one liquid throughout the other so they stay mixed instead of separating.
