Aonori
Aonori is Japan’s green laver, a bright green seaweed of the genera Ulva (syn. Enteromorpha) and Monostroma. Sold dried and crushed into fine flakes or powder, aonori works purely as a seasoning, showered over okonomiyaki, takoyaki, yakisoba, and rice. It’s also often paired with other ingredients to make a multitude of different types of furikake. The heat of a cooked dish wakes up its briny, faintly smoky aroma that tastes greener and more assertive than its cousin, nori.
