Anise Myrtle

Anise myrtle is the herb derived from the leaves of Syzygium anisatum, a rare rainforest tree in the myrtle family (Myrtaceae). Native to the subtropical valleys of northern New South Wales in Australia, anise myrtle holds one of the highest known concentrations of anethole, the same compound that defines anise, fennel, and star anise. Dried and ground or steeped fresh, it scents teas, breads, syrups, and dressings, and pairs beautifully with fish.
