Alder Cones

Alder cones are the spice produced from the small, seed-bearing cones of various species of alder trees (Alnus spp.) in the birch family (Betulaceae). They resemble tiny pine cones and turn brown and woody when mature. They should not be used to spice food directly as they are barely edible. They are primarily used in the smoking process to add a subtly earthy and slightly sweet flavor to meats and fish.
