Kashmiri Red Chilli

The Kashmiri chilli is a long, wrinkled, vivid red variety of Capsicum annuum in the nightshade family (Solanaceae). Grown in Jammu and Kashmir and across northern India, this pepper is prized for its color more than its heat, sitting at a gentle 1,000 to 2,000 on the Scoville scale (milder than a jalapeño). It’s behind the glowing ruby-red color and faintly fruity warmth of rogan josh, tandoori, and butter chicken.
