Chincho

Chincho is the herb derived from the leaves of Tagetes elliptica, an intensely aromatic herb in the daisy family (Asteraceae). A wild Andean marigold and close cousin of huacatay, its flavor is strong and herbal, with notes of mint and basil. In the Peruvian highlands, it’s a classic pachamanca herb, seasoning and sometimes wrapping the meats and veggies before they cook in the earth oven.
