Cedar

Cedar is an aromatic conifer in the cypress family (Cupressaceae). The primary culinary species is the western redcedar (Thuja plicata). Indigenous North American peoples in the Pacific Northwest roast salmon on cedar planks for its clean, resinous smoke. Farther east, the dried leaves flavor meats and teas.
