Njansa

Njansa is the spice produced from the seed kernels of Ricinodendron heudelotii, a tall tropical tree in the spurge family (Euphorbiaceae). Native to the forests of West and Central Africa, the oily kernels are pounded into a paste that both flavors and thickens. Njansa is a staple of Cameroonian cooking, the rich, nutty body and creaminess behind countless sauces and soups.
