Chipilín
Chipilín is the herb derived from the young leaves of Crotalaria longirostrata, a southern Mexican and Central American legume in the pea family (Fabaceae). Always eaten cooked, the leaves flavor tamales, soups, and beans across Guatemala and El Salvador. It must be cooked, either fresh or dried, because raw leaves can make you sick, and the seeds and roots are poisonous.
