Vietnamese Cinnamon
Vietnamese cinnamon, or Saigon cinnamon, is the spice produced from the inner bark of the Cinnamomum loureiroi, a tropical evergreen tree in the laurel family (Lauraceae). It is considered cassia cinnamon, not true cinnamon – which is Ceylon cinnamon from the Cinnamomum verum tree.
