Top Notes

Top notes are the first aromas you notice in a spice or herb—bright, light, and highly volatile, fading quickly when exposed to air or heat. They are highly prized for adding a delicate, vibrant complexity to the overall flavor.

Middle notes form the body of the aroma—the flavor central to the experience of the seasoning.

Base notes are the deep, lingering aromas that emerge more slowly and last longer, often providing warmth, richness, or earthiness that anchors the flavor.
